Xylo-oligosaccharide (XOS) is 2-9 xylose molecules β- It is a mixture composed of 1,4-glycosidic bonds and mainly composed of xylobiose, xylotriose and xylotriose. It was successfully developed and industrialized in Japan in the 1980s. In 2001, it was industrialized in China. Xylooligosaccharides can not be digested by human digestive enzymes, but can be used by beneficial bacteria in the intestine, especially bifidobacteria, to efficiently proliferate beneficial bacteria, inhibit the growth of harmful bacteria, improve intestinal microecology, and further improve human health. Compared with other oligosaccharides, Xylooligosaccharides have better stability and are suitable for all kinds of food processing conditions. With the deepening of the functional research of xylooligosaccharides and the continuous improvement of relevant standards and regulations, Xylooligosaccharides are more and more widely used. At present, they are mainly used in health products, dairy products, functional food and animal feed.
