Gellan gum is a new type of high Polymer gel of Exopolysaccharides produced by fermentation with sphingomonas paucimobilisaby under the conditions of special nutrient medium, then purified, dried and grinded into white powder or light-yellow powder. Including two kinds of low-acid and high-acid, It is widely used in many fields such as food, medicine, cosmetics, etc., as a gelling agent, suspending agent and stabilizer.

Applications of Gellan Gum:
Gellan gum has become a perfect replacement of agar, carrageenan, and xanthan gum used as thickener, stabilizer, gelling agents, suspending agents and film-forming agents,in food and beverage industry, such as jelly, jams, bread fillers, dairy products, meat, cakes, instant coffee, ice cream, candy, sweets. It can also be used as microbial culture or in pharmaceutical, air freshener, toothpaste, etc.
