Carrageenan is obtained by aqueous extraction of natural strains of seaweeds of Eucheuma spinosum of the class Rhdophyceae(red seaweeds). It is the only one kind of colloid which can remain stable in the process of freeze-thaw. So the frozen Iota carrageenan gel may not happen syneresis when thawing. It has been widely used in all kinds of industries such as food, medicine and daily chemicals and so on.
